Cookies filled with Irish cream? Sounds like the perfect way to celebrate St Patrick's Day! Add green sprinkles to make it even more festive. The kiddos can join in too with green colored milk. Make this even better by making homemade Irish cream! 

 Cheers to Milk & Cookies!

Ingredients:

- 1 Batch of your favorite cookies (Chocolate chip, peanut butter, oatmeal chocolate chip...)

- 1 cup of 60% Cacao chips

- 1 cup milk

- 3-4Tbsp of Irish Cream (Make your own)

-1 tsp of Coffee Vanilla Extract (optional)

- Green food coloring added into the milk (optional)

 

Instructions:

  1. Preheat the oven to 350. Grease a mini muffin pan with cooking spray. Divide the dough into the muffin cups. Press down to make the dough evenly distributed in the cups. Don't overfill!  If the dough rises above the cup, it's difficult to remove the cookies in one piece. 
  2. Bake for 14-15 Minutes. Remove from the oven and immediately press each cookie with a tablespoon or the bottom of a shot glass to create the indentation in the cookie.  Cool completely before removing from the muffin pan. Scrape with a knife along the edges of each cookie, they should pop right out.
  3. Melt 1 cup of 60% cacao chocolate chips.
  4. Pour about 1 TBSP of melted chocolate into the cookie cup, spreading it around to fill the inside of each cookie cup.
  5. Combine the milk, and Irish cream. I like to add my vanilla coffee extract to the milk mixture, giving it a subtle coffee flavor.  


To make this kid friendly, omit the Irish cream and add 1 tsp of coffee vanilla extract or plain vanilla extract to the milk.
